Making Your Own Cheese

For some random reason the idea of making cheese popped into my head. So I went searching on the web, and found the following cheesemaking site, complete with online ordering system for all your cheese making needs.

To make cheese, apart from milk and a pan to warm it up in, you need the following equipment:

  • A thermometer: to check the temperature of the milk. It should be between 32 and 38 degrees celcius.
  • Starter culture: bacteria that convert the lactose in the milk into lactic acid. This adds flavour
  • Rennet: an enzyme that causes the milk to curdle, separating it into curds (which are used in the cheese making), and whey (which is generally thrown away but you can use it to make nice scones).
  • Cheesecloth: this keeps the cheese off areas that might infect it, and works as a filter for draining
  • Moulds: for shaping the cheese
  • Cheese press: needed to make hard cheese
